Built in the 1830s, the Old Spanish Sugar Mill is a relic of Florida’s past. Originally, the mill was designed to crush sugar cane by a water wheel with a springhead that shoots out 19 million gallons of water every day. Sadly, the original mill was destroyed twice, during the Seminole War and during the Civil War.
A replica of the mill was built at the turn of the 20th century, and in 1961, it was scheduled for demolition. But Peter Schwarze bought it and refinished it to turn it into a restaurant.

Located in a 100-year-old Spanish sugar mill, the Old Spanish Sugar Mill Restaurant features freshly baked bread, cookies, and cook-your-own pancakes. The restaurant is open daily, except for Thanksgiving and Christmas.
It is open for breakfast and lunch from 8 a.m. to 2 p.m. Monday through Friday and 8 a.m. to 4 p.m. on weekends and holidays. For dine-in dining, you must purchase park admission.

You may have heard about the Old Spanish Sugar Mill in DeLeon Springs State Park, which is in imminent danger of closing. This popular pancake spot is a concession for the Florida Parks Service, but it is in danger of closing soon.
The concession has been in business since 1974, but it is now in jeopardy of closing. The closure could come as early as September 30. It’s a pity because this historic place is a tourist attraction.
